Soul food has a rich and important history that was born out of struggle and survival, and which ties African American culture to its African roots. It is a style of cooking that originated throughout the South, primarily in Georgia, Mississippi, Louisiana, the Carolinas and Alabama .... stemming from the paltry food rations provided during the transatlantic slave trade. The enslaved used these rations to preserve their food traditions by formulating new and traditional recipes from limited and unfamiliar ingredients. Over time, these recipes and techniques have become the soul food dishes we know and love today.
